Star anise is the dried, star shaped fruit of Illicium verum – an Asian evergreen tree, a member of the Magnolia family. The fruits are harvested just before ripening, when the essential oil content is high. Star Anise has a strong, sweet, liquorice like character with deep warm spicy notes like clove and Cassia. You can also sense some floral notes, with a touch of acidity.
